Spring Farm to Table dinner to feature heirloom chicken and spring greens
HARRISBURG, PA – Slow Food Harrisburg’s spring Farm to Table dinner will feature heirloom free-range chicken and fresh earth popping spring greens. Meet the producers (bringing the farm to the table) and enjoy a delicious four course dinner. The dinner will be held at 6:00 PM on April 30 at The Cellar restaurant, Camp Hill.
Our headliner chicken, Rhode Island Red, has been called an iconic symbol of American agriculture. Developed in Rhode Island around the 1880s, the bird sports deep reddish feathers and pink comb, remnants of its Malay, Shanghai and Java ancestry. The breed has been honored by two historic monuments and is listed in Slow Food’s Arc of Taste. Other featured products include dandelion and red amaranth, tonic for the winter-weary soul. The dinner is BYOB.
Producer Reception: Pâté of Chicken Liver and local Beet Root; Tempura soft boiled eggs, smoked Paprika Aioli; and Deviled eggs with a variety of truffle, saffron and chicken mousse fillings. Complementary glass of wine.
Salad: Dandelion and Amaranth Salad with Dijon Vinaigrette.
Entrée: Ballotine of Rhode Island Red Chicken stuffed with York Apple, sautéed Morel mushrooms and English Peas; then poached in Green Tea-infused Chicken consommé.
Dessert: Meyer Lemon Semi-freddo with frozen egg custard, Moscato Honey.
